Well Friends, it’s been a little over a week since I last posted about our Whole 30 progress. Looking back at that first week I am SO glad we aren’t still stuck there! Seriously I wanted to punch people that first week! But I am happy to say that things have gotten much easier. We aren’t having as many cravings and it’s almost just become our normal now. I’ve been taking it easier on myself with not feeling like I need to be in the kitchen prepping for hours every day as well. We are now on day 18 and honestly if you would have told me even two months ago that I could go 18 days without pasta or bread I would have thought you were crazy! I’m proud of Mike and I for sticking to this. They say that by the end of the second week you should start feeling much different… like sleeping better, having more energy, feeling happier and more focused. I’m not sure if Mike and I are necessarily feeling different then what we did before we started this. I think we are just feeling pretty normal. Also, I know this program isn’t about losing weight but most people end up losing several pounds while on it. Neither Mike nor I has noticed anything in this area either. The things we were hoping to see change were sleeping better, having more energy and losing some weight… so lets hope these last 12 days can show us something. We have found so pretty good meals through this though. Things I probably wouldn’t have tried otherwise. I’m going to share a few of our favorite meals with you today! I seriously don’t know what I would have done without Pinterest during these last 18 days. It’s given me a lot of interesting ideas instead of having just plain jane meals. Whole30_update

-First up is the dinner we just had last night. Zucchini noodles in a lemon garlic sauce with sugar free bacon. The recipe calls to have scallops with it but I made tilapia instead. It turned out great and I think we’ll definitely make this dish again even when we aren’t on Whole 30. You can find the recipe here.

-The next photo is the homemade mayo I’ve been making. We’ve used this to make egg salad, as the base to different salad dressings and much more. You can find the recipe here

-The third photo across the top is our new favorite thing! They are called raw brownie bites. For not being able to have chocolate, these have been amazing. They might taste different to you if you are used to eating sugar… but our taste buds have changed through this and these taste amazing to us. We like to have one or two of these after dinner as a little treat :) You can find the recipe here. Seriously go make these and tell me what you think!

-For Superbowl Sunday we decided to make a big plate of nachos! We first made our own sweet potato chips in the oven and then topped them with ground beef with homemade taco seasoning, (I will never buy store bought taco seasoning again! This tasted exactly the same but with SO much less sodium!!) diced roma tomatoes and homemade guacamole. I wouldn’t say this version was as good as the nachos I usually make but they were pretty darn good.

-The middle photo on the bottom shows sweet potato buns. I wasn’t sure if these would turn out or not but I would say that this was our favorite meal so far! We made sweet potato buns with turkey burgers from Trader Joes and topped them with caramelized onions, tomato and guacamole. I really thought that I would miss having cheese but with everything on it I didn’t miss it at all. The buns work and taste great!

– Lastly… this wasn’t my favorite meal but Mike and some of our close friends liked it. It is shepherd’s pie but with mashed sweet potatoes on top. You can find the recipe here.

I hope I maybe gave you an idea for dinner tonight…or at least go try those brownie bites! I’ll check in at least one more time to let you know how things are going with Whole 30. Hope everyone has a rest of the week!
